Gingerbread Truffles Recipe

RECIPE INGREDIENTS
» For Gingerbread Truffles //
- 10-12 gingerbread/gingersnap cookies
- 2-3 tablespoons vanilla sugar (or use powdered sugar + 1/4 teaspoon vanilla)
- 40 grams butter, cream cheese or coconut oil
» For Decoration //
- 200 grams white baking chocolate or any other chocolate of your choice
- Sprinkles of choice
RECIPE INSTRUCTIONS
» How to Make Gingerbread Truffles //
- Use a grinder or food processor to process your cookies until they become very fine crumbs. Alternatively, put cookies in a resealable plastic bag and smash with a rolling pin until they are crumbs.
- Add in butter and vanilla sugar and process again until well-blended.
- The dough should be moist enough to hold together when you press it into a ball.
- Transfer mixture into a plate.
- Then roll cookie mixture into 1 inch balls using a cookie scoop, melon baller or hands.
- It makes about 14 1-inch balls. I used my hands for shaping them into balls to make them completely round. Place onto a plate wax paper lined plate and refrigerate for 15 minutes.
- Melt chocolate in a microwave on for 2-3 minutes stirring after each minute until smooth. Alternatively, melt white chocolate slowly in a double boiler.
- Dip lower half of each truffle into chocolate mixture; allow excess to drip back into the bowl. You can also coat them in chocolate fully.
- Place the coated truffles onto a plate or a cookie sheet.
- Immediately top with sprinkles. Repeat with remaining cookie balls.
- Allow truffles to rest refrigerate for 15 minutes, or until the chocolate has set. Enjoy.
RECIPE NOTES
- You can also add a pinch of nutmeg or cinnamon for extra flavors.
- Vanilla sugar can be replaced with Powdered sugar. If you are planning to omit vanilla sugar, then add some vanilla or almond extract.
- You can easily double or triple this recipe if you are planning to gift these truffles to your friends, co-workers, or neighbors during the holiday season.
