Achaari Dahi Bhindi with Duppad Roti - Pad Wali Roti
Duppad is a layered Indian Flatbread which gets separated into two layers after cooking. Achaari Dahi Bhindi, a veg stir-fry is a bonus with this recipe.

RECIPE INGREDIENTS
» Ingredients For Achari Dahi Bhindi
- Sliced, okra / bhindi - 4 cup/ 500 grams
- Red onion, sliced - 1 cup
- Mustard oil - 2 tablespoons
- Fennel seeds / saunf - 2 teaspoons
- Mustard seeds / rai - 1 teaspoon
- Nigella seeds / kalonji - ½ teaspoon
- Cumin seeds - 1 teaspoon
- Fenugreek seeds / methi dana - ½ teaspoon
- Pinch of asafetida/hing
- Chopped ginger, finely / adrak - 2 teaspoons
- Chopped garlic, finely / lahsun - 2 teaspoons
- Tomatoes, chopped - 1 large
- Natural yogurt - ? cup (use dairy-free yogurt to make it vegan)
- Salt to taste
- Red chili powder / lal mirch - 1 teaspoon
- Turmeric powder / haldi - ¼ teaspoon
- Coriander powder - 2 teaspoons
- Garam masala powder - ¼ teaspoon
» Ingredients For Duppad Roti //
- Whole wheat flour - 2 cups
- Salt as per taste
- Oil for dough - 1 teaspoon
- Oil dipping dough ball - 4-5 tablespoons
- Extra flour for dusting
- Ghee / clarified butter for smearing
- Water for kneading dough
RECIPE INSTRUCTIONS
» How to Make Achari Dahi Bhindi //
- Heat oil in a non-stick pan. Add nigella seeds, fennel seeds, mustard seeds, fenugreek seeds, asafetida and sauté on a medium heat for a few seconds.
- Add chopped ginger, chopped garlic and sauté for 30 more seconds.
- Now add sliced onions and sauté until translucent.
- After that, add green chili, salt, and turmeric powder and sauté for a minute.
- Add bhindi/okra and sauté for 5-7 minutes on medium heat, while stirring occasionally.
- After that, add chopped tomatoes, and sauté for 1 minute.
- Now add coriander powder, chili powder, garam masala powder and mix well.
- Sauté for another minute.
- After that, add yogurt and mix everything well until combined.
- Cover and cook for 3-4 minutes, while stirring occasionally.
- Uncover the pan, and add mango pickle and mix well.
- Let it cook for another minute and remove from heat.
» How to Make Duppad Roti //
- Add 2 cup whole wheat flour, and salt to a mixing bowl.
- Now add enough water and knead to make a soft dough.
- Apply 1 teaspoon oil and shape into a ball.
- Cover and set aside for 30 minutes.
- Divide the dough into 12-14 equal sized balls. Now take two balls and flatten them.
- Dip one ball into oil and dip another one into dry flour.
- Join both balls and merge them together by pressing and seal the corners as shown in the video.
- Roll this into about 7 inch circle.
- Cut the edges with a pizza cutter or knife to make an even circle from all the sides.
- Heat a pan or tawa and place the rolled roti.
- Once you see the bubbles, flip it and roast on the other side.
- Press the circle evenly with a napkin on all sides with very soft hands while roasting. This process would separate the layers.
- Now carefully pick the upper half of it on the side and pull over gently to peel off the layer completely.
- This time, you will see that the chapati has split into two equals. Repeat the same process with other dough balls.
- Remove from heat and place them on a plate. Smear them with ghee.
- Roll them into triangles as shown in the video.
- Serve duppad roti with achari dahi bhindi.
