  1. Preheat your oven to 350°F (175°C). Remove the pits from the dates (skip this step if using pitted dates) and set them aside. If the dates are not soft, soak them in warm water for 10 minutes. In a food processor, combine the almond meal (or ground raw almonds) and pitted dates. Pulse until the mixture comes together into a sticky dough. **Tip:** If using raw almonds, pulse them first until they form a coarse meal before adding the dates.
  2. Transfer the dough to a plate and roll it into small balls (about 1 tablespoon each). Line a baking sheet with parchment paper and place the dough balls on the tray, spaced about 1 inch apart.
  3. Use a wet or greased fork to press down and create crisscross patterns on each cookie. Place the tray in the oven and bake for 10-12 minutes, or until golden brown around the edges. Once baked, remove the cookies from the oven.
  4. Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Your healthy, delicious, and easy-to-make almond date cookies are ready to be enjoyed! Serve them immediately, or store them in an airtight cookie tin at room temperature for up to a week.
