RECIPE INGREDIENTS
» For Aloo Beans
- 4 medium potatoes, peeled and diced
- 4 tablespoons oil
- 1/4 teaspoon asafoetida (heeng)
- 1 green chili, sliced
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 tablespoon ginger, chopped
- Salt, to taste
- 400 grams French beans, trimmed and cut into 1-inch pieces
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon dry mango powder (amchur)
- 1 tablespoon dried fenugreek leaves (kasoori methi), crushed
- 1/2 teaspoon garam masala powder
- 4-5 tablespoons water, or as needed
- A handful of fresh coriander leaves, chopped
RECIPE INSTRUCTIONS
» For making Aloo Beans
- Dice the potatoes. Trim the edges of the French beans and cut them into 1-inch pieces.
- Heat oil in a pan over medium heat. Once hot, add cumin seeds, mustard seeds, and asafoetida. Let them sizzle until fragrant. Add the green chili and chopped ginger. Mix well and sauté for a minute.
- Add the diced potatoes and mix well. Add salt, cover the pan, and cook on medium heat for 3-4 minutes, stirring occasionally, until the potatoes start to soften. Toss in the French beans and mix well with the potatoes.
- Add turmeric powder, chili powder, coriander powder, garam masala powder, amchur, and kasoori methi. Stir to coat the vegetables evenly. Pour in the water and mix well, deglazing the pan as you stir.
- Cover with a lid and cook for 5-7 minutes, or until the beans are cooked. Add chopped coriander leaves and mix well. Turn off the heat. Garnish with additional fresh coriander leaves if desired. Serve this Aloo Beans Ki Sabji hot with roti, paratha, or rice.
RECIPE NOTES
- To get a pungent flavor, you can use mustard oil for making this Aloo Beans Ki Sabji.
- While cooking the beans and potatoes, make sure to deglaze the pan after adding water. This makes cooking easier.
