RECIPE INGREDIENTS

- 1 beetroot
- 1 apple
- 2 carrots
- 1 tablespoon chopped cilantro
- 1/2 inch piece of peeled ginger
- 1.5 teaspoons lemon juice
- 1/2 teaspoon ground black pepper
- Salt to taste
- 1 teaspoon honey (optional)
- 1 tablespoon olive oil
- Sliced almonds for topping
- Chia seeds for topping
RECIPE INSTRUCTIONS
» How to Make Apple Beetroot Carrot Salad
- Peel the carrots, apple, and beetroot. Trim the edges from carrots and beetroot.
- Slice the apple into quarters and remove the core. Grate the carrots, apple, and beetroot using a box grater or food processor.
- Transfer the grated carrots, apple, and beetroot to a large mixing bowl. Add the chopped cilantro. Drizzle lemon juice and season with ground black pepper and salt.
- Drizzle the honey, and olive oil over the salad. Grate the ginger directly on the bowl.
- Toss everything well to combine. Transfer to a serving bowl and top with chopped cilantro, chia seeds, and sliced almonds. Your ABC salad or Apple Beetroot Carrot Salad is ready! Serve fresh and enjoy!
RECIPE NOTES
- I used a box grater for grating the apples, beetroot, and carrots. You can also use a food processor for quick and even grating.
- I added all the dressing ingredients directly to the mixing bowl. You can also make the dressing separately and then toss it with the apples, carrots, and beets.
