  1. Peel the carrots, apple, and beetroot. Trim the edges from carrots and beetroot.
  2. Slice the apple into quarters and remove the core. Grate the carrots, apple, and beetroot using a box grater or food processor.
  3. Transfer the grated carrots, apple, and beetroot to a large mixing bowl. Add the chopped cilantro. Drizzle lemon juice and season with ground black pepper and salt.
  4. Drizzle the honey, and olive oil over the salad. Grate the ginger directly on the bowl.
  5. Toss everything well to combine. Transfer to a serving bowl and top with chopped cilantro, chia seeds, and sliced almonds. Your ABC salad or Apple Beetroot Carrot Salad is ready! Serve fresh and enjoy!

RECIPE NOTES
