RECIPE INGREDIENTS
» For Asian Noodle Soup
- 200 grams rice noodles
- 1/2 cup chopped cabbage
- 1/2 cup chopped carrots
- 3 cups hot water or vegetable broth
- 1/2 cup spring onion greens, chopped
- 1/2 cup cilantro, chopped
- 1 teaspoon chili flakes
- 1 teaspoon sesame seeds
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- 2 tablespoons hot oil
- 1 tablespoon vinegar
- 1 tablespoon soy sauce
- Salt, to taste
- Chili oil for serving
RECIPE INSTRUCTIONS
» Prepare the Noodles:
- Place the rice noodles in a large bowl. Pour boiling hot water over the noodles, making sure they are completely submerged.
- Also, add chopped cabbage and carrots and mix well.
- Cover with a lid and let them sit for about 3 minutes or until tender.
» Make the Soup Base:
- In a separate bowl, combine spring onion greens, chopped cilantro, red pepper flakes, sesame seeds, hot oil, vinegar, and soy sauce. Also, add salt if needed.
- Stir well to mix.
» Make Asian Noodle Soup
- Pour noodle water and mix well.
- Top with the cooked noodles along with veggies and mix.
- Add chili oil for an extra punch before serving!
