Vegetable Bhaji Burger
Burger Bhaji is classic twist to an indian street food Pav Bhaji. Bhaji is delicous combintaion of mashed vegetables which is generally served with pav.

RECIPE INGREDIENTS
» For Bhaji //
- 4 medium potatoes peeled, and chopped
- 4 medium tomatoes, chopped
- 1 cup cauliflower, chopped
- 2 capsicum, chopped
- 2 carrot, chopped
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- 1 cup cabbage, shredded
- 2 onions, chopped
- 1 tablespoon ginger, crushed
- 2 tablespoons garlic, crushed
- 2 green chilies, chopped
- 1/2 cup green peas
- 2 tablespoons oil
- salt as per taste
- 2 tablespoons pav bhaji masala
- 4 tablespoons butter
- 6 burger buns 8
- Butter for roasting
» For serving //
- Fresh coriander leaves, chopped
- Butter
- Finely chopped onion
- 4 slices lemon wedges
RECIPE INSTRUCTIONS
» How to make Bhaji //
- Add potatoes, green peas, cabbage, cauliflower, carrot, capsicum along with 1/4 cup of water, salt, and turmeric powder to a pressure cooker.
- Close the lid, and pressure cook for 5-6 whistles. Remove from heat and let the cooker cool down.
- When the cooker has cooled off, open the lid, and press boiled vegetables with a masher.
- Heat a pan. Add oil, and butter to it. Now add chopped onions and saute for 3-4 minutes.
- Add ginger, garlic, chopped green chilies, and saute for 2 minutes.
- Add chopped tomatoes, and cook for 4 minutes. Now add red chili powder, pav bhaji masala and mix well.
- Cook for 5 minutes. Add mashed vegetables to this gravy. Mix well, and cook for 10 minutes on medium-low heat.
» How to roast Burger //
- Heat a thick-bottomed pan. Add some butter to the pan.
- Slice burger breads horizontally into two, and roast from both sides for half a minute, or till burger bread is crisp and light brown.
» How to serve Burger Bhaji //
- Garnish the bhaji with chopped coriander leaves, butter, and chopped onion.
- Serve Bhaji hot with burger bread accompanied with lemon wedges.
RECIPE NOTES
- You can replace burger buns with pita bread, or hot dog buns.
