Tortilla Pizza Caramelized Veggie Tortizza (2 ways)
These Tortizza are arrays of colors and flavors on a crunchy tortilla base. They have freshly caramelized veggies, pesto and tomato base for the sauce.

RECIPE INGREDIENTS
» For Caramelized veggies //
- 2 tablespoons Oil
- 1 tablespoon Butter/margarine
- 3/4 cup Onions sliced
- 1.5 cup Bell pepper slices (I used orange and yellow)
- 1 large Tomatoes, cut lengthwise
- 1/2 cup Green peas
- 1 tablespoon white vinegar
- 1 tablespoon Maple syrup
- Ground pepper to taste
- Salt to taste
- 2 Spring onion, stem removed and chopped
» For serving Caramelized veggie pizza //
- Tomato chili dressing
- Garlic dressing
- Red chili flakes
- Purple grapes
- Fresh arugula
» For Pesto caramelized veggie pizza //
- 2 large tortillas
- 1/4 cup basil pesto
- 200 g mozzarella cheese grated
- 1/8 cup sun-dried tomatoes
» For Caramelized veggie pizza //
- 2 large tortillas
- 1/4 cup pizza sauce
- 200 g mozzarella/gouda cheese grated
- 1/8 cup black olives
- 1/8 cup sun-dried tomatoes
» For serving Pesto caramelized veggie pizza //
- Fresh parsley leaves
- Tomato chili dressing
- Garlic dressing
- Roasted peanuts
RECIPE INSTRUCTIONS
» How to caramelize veggies: //
- Heat oil and butter in a large skillet.
- Add onions and sauté for a minute.
- Add bell peppers and sauté another minute.
- Add tomatoes, green peas and sauté for 2 minutes.
- Add vinegar and maple syrup. Season with salt and pepper to taste.
- Add chopped spring onions and sauté another minute. Remove from heat and set aside.
» Assembling Pesto caramelized veggie pizza: //
- Preheat oven to 180°C/356°F. Grease an oven safe tray with olive oil or cooking oil spray. Place 2 tortillas on the oven safe baking tray.
- Spread pesto on both the tortillas.
- Add a generous amount of stir-fried veggies. Top with sun-dried tomatoes.
- Sprinkle with cheese, and place into the oven (on the middle shelf). Bake for 10 minutes, or until cheese is melted and crust is brown.
- Top with roasted peanuts. Drizzle with tomato chili and garlic dressings. Garnish with fresh parsley. Enjoy!
» Assembling the Caramelized veggie pizza: //
- Preheat oven to 180°C/356°F. Grease an oven safe tray with olive oil or cooking oil spray. Place 2 tortillas on the oven safe baking tray.
- Spread pizza sauce on both.
- Add a generous amount of veggies.
- Top with sun-dried tomatoes. Sprinkle with cheese, and top with olives.
- Bake for 10 minutes, or until cheese is melted and crust is brown. Top with purple grapes. Drizzle with tomato chili and garlic dressings.
- Sprinkle chili flakes and garnish with fresh arugula. Enjoy!
