RECIPE INGREDIENTS
» For Corn Chilli Cheese Toast
- 6 bread slices of your choice
- 1 cooked corn on the cob (kernels removed)
- 1/2 small onion, finely chopped
- 2 green chilies, finely chopped
- 4 tablespoons mayonnaise
- 1/4 cup mozzarella or any melting cheese (for the mixture)
- Additional cheese for topping
- 1 teaspoon Italian seasoning
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt to taste
- Butter for spreading and cooking toast
- Tomato ketchup for spreading on bread slices
RECIPE INSTRUCTIONS
» Prepare the Corn Mixture
- To remove kernels, hold the cob upright and cut downward with a sharp knife. Rotate the cob and repeat until all kernels are removed. In a bowl, combine the cooked corn kernels, chopped onions, chopped green chilies, Italian seasoning, red pepper flakes, ground black pepper, salt, mayonnaise, and 1/4 cup of cheese. Mix everything well until combined.
» How to Make Corn Chilli Cheese Toast
- Spread a thin layer of butter on one side of each bread slice. On the buttered side, spread a thin layer of tomato ketchup.Place a generous amount of the prepared corn mixture on the ketchup side of each bread slice. Top with some extra cheese, and sprinkle some Italian seasoning and red pepper flakes for added flavor.
- Heat a pan over medium heat. Once hot, apply some butter. Then place the assembled bread slices in the pan. Cover the pan with a lid and cook on low to medium heat until the cheese melts and the bottom of the bread is golden brown and crispy. This process will take about 3-4 minutes.
- Once done, remove the toasts from the pan. Slice them, and enjoy your delicious Corn Chilli Cheese Toasts as a snack or a quick meal.
RECIPE NOTES
- If you are using sourdough bread and slicing it at home, make sure to slice the bread evenly for uniform cooking.
