Couscous with Sauteed Mushrooms Kidney Beans - Video

RECIPE INGREDIENTS
» For Couscous //
- 1.5 cups water
- 1 cup uncooked couscous
- 1 tablespoon olive oil (feel free to use any other oil)
- salt to taste
» For Sauteed Mushroom Kidney Beans //
- 2 tablespoon olive oil
- 2 tablespoons finely chopped or minced garlic
- 1 tablespoon garlic paste
- 1 small green chili, chopped
- 1 large onion, sliced
- 1.5 cups mushroom, sliced
- 4 tablespoons tomato paste
- 1 tablespoon maple syrup
- 2 tablespoons soya sauce
- 1 tablespoon white vinegar
- Salt to taste
- 1.5 cups cooked, kidney beans
- 1.5 tablespoon sriracha sauce
- 1.2 tablespoons chili flakes, or as per taste
- 4 tablespoon spring onions
RECIPE INSTRUCTIONS
» Cooking Couscous //
- Bring water to boil.
- Add uncooked couscous, salt and oil.
- Mix well and cook for 4-5 minutes or until cooked.
- Fluff with a spoon/fork, and set aside.
» Making Sauteed Mushroom Kidney Beans //
- Heat oil in a large nonstick skillet.
- Add chopped garlic and saute for few seconds.
- Add ginger paste and saute.
- Now add onions, and stir-fry them for 2 minutes.
- Add mushroom and cook for 3 more minutes.
- Add tomato paste a cook for a minute.
- Now add maple syrup, soya sauce, vinegar, salt and sriracha sauce.
- Mix well and cook for 2 minutes.
- Add cooked kidney beans and cook for 1-2 minutes or until thickened.
- Add chopped spring onions and cooked for few seconds.
- Serve Sauteed Mushroom Kidney Beans hot with cooked couscous. Enjoy!
