RECIPE INGREDIENTS
» Eggless Chocolate Mousse Cake:
- 1 liter full-fat or whole milk
- 125 ml heavy cream or whipping cream (35% fat)
- 50 grams unsweetened cocoa powder
- 50 grams of corn starch
- 1 tablespoon instant coffee powder
- 3/4 cup sugar or more to taste
- Pinch of salt (optional)
- 10 oz (300 grams) dark chocolate
» For Decorating (Optional):
- Cocoa powder
- Chopped pistachios
- Chocolate candies
RECIPE INSTRUCTIONS
» Making Eggless Chocolate Mousse Cake:
- In a large mixing bowl add 1-liter milk, 125ml heavy cream or whipping cream, 50g unsweetened cocoa powder, 50 grams cornstarch, 1 tablespoon instant coffee powder, 3/4 cup sugar, and a pinch of salt.
- Whisk everything well using a wired whisk.
- Strain this mixture through a sieve into a pan.
- Cook this chocolate mixture on medium heat and let it come to a soft boil. (Keep Stirring occasionally).
- Add 300 grams dark chocolate and stir.
- Keep stirring and cooking until the mixture has thickened. It thickens quickly after adding chocolate, so keep an eye on it.
- Line the base and side of a heatproof cake pan with the parchment paper.
- Pour this mixture into the prepared pan and gently tap it to remove the air bubbles.
- Let the chocolate mixture cool completely at room temperature.
- Refrigerate it for at least 6 hours or overnight to set.
- After refrigeration, take the cake out of the pan by flipping it on a board or cake stand.
- Remove parchament paper.
- Before serving, dust the top of the cake with cocoa powder.
- Garnishing with pistachios, and chocolate candies, and/or with fresh berries if desired.
- Slice this cake using a hot knife for a fine touch. Serve with a cup of coffee.
RECIPE NOTES
- You can use dark chocolate chips instead of the dark chocolate bar.
- Coffee powder enhances the chocolate flavor in this chocolate mousse cake. However, you can skip it if you don?t like the taste of coffee in your chocolate mousse cake.
