RECIPE INGREDIENTS
» For Grilled Peaches with Cheese and Honey
- 5 ripe freestone peaches
- 1 tablespoon olive oil
- 120 grams of soft walnut cheese or goat cheese
- a handful of walnuts
- a handful of fresh mint and parsley
- Freshly ground black pepper
- 3-4 tablespoons honey
- Pinch or rock salt, optional
- 1 teaspoon dried oregano
RECIPE INSTRUCTIONS
» Making grilled peaches with cheese and honey
- Cut the peaches in half, lengthwise, and remove the stone. You can use halves or quarter them as I did.
- Preheat a stove-top griddle pan or grill on medium heat. Drizzle or spray the olive oil on the griddle pan. Place the peaches on a griddle pan, flesh side down. Spray the top with more olive oil and grill for 2 minutes or until peaches are grilled and caramelized. Flip and grill the peaches from another side as well.
- Meanwhile, slice the cheese into 1/2 inch pieces and keep it aside. Also, roughly chop the walnuts.
- Once the peaches are grilled from all sides and nicely charred, transfer them to a serving plate. Top each hot grilled peach piece with cheese. This step would allow the cheese to melt slightly. Sprinkle with roughly chopped mint, parsley.
- Top with walnuts and drizzle with honey. Sprinkle with a pinch of salt, ground black pepper, and dried oregano. Enjoy warm!
RECIPE NOTES
- I have grilled peaches using olive oil, you can also use butter for grilling. It tastes best specially if you are planning to serve them with whipped cream or ice cream
- Adding dried oregano and salt is entirely optional in this recipe.
- Peach kabobs - You can also make peach kabobs by threading peaches into a skewer.
