RECIPE INGREDIENTS
» For Paratha //
- Chapati/paratha dough
- Some extra wheat flour for rolling
- Ghee or oil for roasting
» For Gulkand Stuffing //
- 3 tablespoons gulkand
- 1 teaspoon fennel seeds / saunf
- 1 teaspoon sesame seeds / til
- 1 teaspoon cardamom powder / ilaichi powder
- 2 tablespoons chopped pistachio, and chopped cashews
» For Gulkand Raita //
- 1/4 cup full cream yogurt
- 1 teaspoon gulkand mixture
- 2 teaspoons honey
RECIPE INSTRUCTIONS
» How to Make Gulkand Paratha Stuffing: //
- In a mixing bowl, add gulkand, fennel seeds, sesame seeds, cardamom powder, chopped nuts, and mix well to combine.
» How to Make Gulkand Raita: //
- In a mixing bowl, add yogurt, gulkand mixture, honey, and whisk well.
- Refrigerate for 30 minutes.
» How to Make Gulkand Paratha: //
- Spread some flour and roll out one dough ball into a circle of 4 inch diameter.
- Place 1 tablespoon gulkand mixture in the center of the dough circle.
- Bring together all the sides in the center and seal edges tightly.
- Roll out again into a circle of 6 inch diameter with the help of some flour.
- Heat a pan. Roast rolled circles from both sides.
- Apply ghee on both sides. Roast until golden brown from pboth sides. Repeat with the remaining dough and filling to make more parathas.
» Serving: //
- Cut parathas into 4 equal pieces. Drizzle with some honey and sprinkle with chopped nuts and dried rose petals.
- Serve hot gulkand parathas with chilled gulkand raita.
RECIPE NOTES
- To make it vegan, replace ghee with oil/margarine, honey with sugar/maple syrup, and yogurt with coconut yogurt.
