Quick And Easy Bhatura - Instant Bhature With Soda Water
Making traditional puffed bhatura is a tedious task since it requires fermentation. Here is a quick recipe with a video tutorial to cook instant bhatura.

RECIPE INGREDIENTS
» For Instant Bhature:
- 2 cups all-purpose flour (maida/plain flour/refined flour)
- 1/4 cup semolina (rava/sooji)
- 1 tablespoon sugar
- ½ teaspoon salt
- 2 tablespoons oil
- 4 tablespoons plain yogurt (dahi)
- 3/4 cup soda water room temperature, or as required
- Oil for deep frying
» For serving:
- Chana masala/chole masalafor serving
- Onion rings
- Pickle
- Raita
RECIPE INSTRUCTIONS
» Making Instant Bhature:
- Add flour, semolina to a large mixing bowl. Mix them well.
- Add oil, salt, sugar, yogurt and mix everything well to combine.
- Knead into a soft dough using soda water.
- Cover with a muslin cloth and set aside for 30 minutes.
- After 30 minutes, uncover the dough. Apply little oil and knead lightly.
- Divide the dough into 6-8 equal portions with greased hands and roll into balls.
- Roll out into an oval shape.
- Heat enough oil in a pan.
- Slide rolled bhatura into hot oil.
- Deep fry on high heat till the bhatura puff up and both sides are slightly golden brown in color. (Pressing the center lightly with a large frying spoon and splashing hot oil over the bhatura would help bhatura to puff up completely.)
- Drain fried bhatura on an absorbent paper to remove excess oil. And deep fry rest of the bhaturas.
- Serve hot with amritsari chole, or chole masala, onion rings, pickle and some Raita.
RECIPE NOTES
- You can make your bhature more flavourful by adding some dry roasted kasuri methi. This will enhance the taste of bhatura and would add more flavour to this puffed bread.
- You can also add some carom seeds (ajwain) to the dry flour before kneading the dough. Your bhatura would taste like ajwain ki puri.
- You can make ?Bhatura? more delectable by adding your twist to this recipe. Like while kneading the dough you can add some dry roasted kasuri methi to the dough - this will add more flavors and surely enhance the taste of bhatura.
- I have added yogurt in ?Bhatura? recipes, but you can also add some warm milk along with yogurt. Your ?Bhatura? would come out more softer.
