RECIPE INGREDIENTS
» For Kiwi Salad
- 4 ripe kiwis, peeled and sliced
- 1/2 large cucumber, sliced
- 1/2 medium onion, sliced
- 2 cups arugula or mixed greens
- 1/2 cup lettuce, torn
- 2 tbsp walnuts, chopped and toasted
- 2 tbsp pistachios, chopped and toasted
- 1/4 cup feta cheese, crumbled
» For the Olive Oil Dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
RECIPE INSTRUCTIONS
» Make the Dressing
- In a small jar, combine olive oil, lemon juice, a pinch of sea salt, and freshly ground black pepper. Secure the lid and shake well to blend all the ingredients thoroughly. Set this aside as you prepare the salad.
» How to Assemble the Kiwi Salad
- Spread the arugula and torn lettuce evenly on a large plate or in a serving bowl. Layer the sliced cucumbers, kiwis, and onions over the greens.
- Sprinkle the toasted pistachios, walnuts, and crumbled feta cheese on top. Shake the dressing, drizzle the prepared dressing over the salad. Toss everything together to coat the ingredients evenly and enjoy your deliciously fresh Kiwi Salad.
