RECIPE INGREDIENTS
» For Lehsuni Dum Aloo:
- 10-12 baby potatoes, pricked, boiled, and peeled
- 10-12 garlic cloves, peeled
- 6-7 dried red chili
- 2 tablespoons coriander seeds
- 2 large tomatoes, diced
- 2 teaspoons cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon Kashmiri red chili powder (optional)
- Salt to taste
- 1 tablespoon Kasuri methi, crushed (dried fenugreek leaves)
- 2 tablespoons coriander leaves, chopped
- 6 tablespoons oil (for shallow frying and cooking curry)

RECIPE INSTRUCTIONS
» How to Make Lehsuni Dum Aloo:
- Heat a pan and dry roast dried red chilies and coriander seeds.
- Let them cool down a bit and transfer them to a blender jar.
- Also add tomatoes and garlic cloves, and blend to make a smooth paste.
- Keep the paste aside.
- Heat oil in a nonstick saucepan.
- Add potatoes and shallow fry them on medium heat till they turn golden in color.
- Once they are golden, transfer them to a plate and set aside.
- In the same oil, add cumin seeds.
- As cumin seeds start to crackle, add Kasuri methi and sauté for 30 seconds.
- Add the prepared tomato garlic paste and stir it well. Let it cook for 2 minutes.
- Add turmeric powder, Kashmiri red chili powder, salt and mix well.
- Now add shallow fried potatoes and mix gently.
- Reduce the heat to medium-low and add 1/4 cup of water.
- Cover and cook for about 7-8 minutes. Keep checking it occasionally to make sure it doesn?t stick to the bottom. Add more water, if needed.
- Open the lid, and garnish curry with coriander leaves.
- Transfer lehsuni dum aloo curry to a plate and serve hot with paratha, naan, or rice.
