RECIPE INGREDIENTS
» For macaroni //
- Macaroni - 2 cups
- salt
- oil - 1 tsp
» For Coconut Vegetable Curry //
- olive oil for curry - 2 tbsp
- onion, ginger, garlic paste - 1/2 cup
- curry powder - 1 tbsp
- chili fresh, and chopped - 1
- 1 tsp cumin seeds
- cubed tomatoes - 2
- frozen mix veg - 2 cups (I am using broccoli, cauliflower, green beans, and carrot)
- green peas - 1/2 cup
- potatoes boiled, and sliced -1
- coconut milk - 1 tin (400ml)
- salt as per taste
- turmeric powder - 1/4 tsp
- garam masala powder -1/4 tsp
- coriander powder -2 tbsp
RECIPE INSTRUCTIONS
» Cooking Macaroni //
- Heat a pan. Add enough water, 1 tsp oil, salt, and macaroni. Cook according to the instructions on the package.
- Heat another pan, and add oil to it. Add cumin seeds, and when seeds start to splutter add onion ginger-garlic paste.
- Sauté them till they turn brown in color. Add cubed tomatoes, and cook for 3 minutes
» Making Vegetable Coconut Curry //
- Now add salt, turmeric, coriander powder, and curry powder. Mix well and sauté for 3 more minutes.
- Add coconut milk, and mix well. Let it cook for 5 minutes. Add all of the vegetables, and mix well.
- Let the vegetables cook covered in coconut sauce, for 5-7 minutes on medium-low heat. Add garam masala powder, and mix well. Remove from heat.
- Garnish with chopped coriander.
» Serving //
- Transfer vegetable coconut curry in a serving bowl.
- Add cooked macaroni to it. Serve hot and enjoy!
