RECIPE INGREDIENTS
» For Malai Kofta Balls //
- Potatoes, Peeled, Boiled & Grated - 4
- Grated Paneer (Cottage Cheese) - ½ Cup
- All Purpose Flour - 4 Tbsp
- Green Chili, Chopped // 1
- Breadcrumbs - 2 Tbsp
- Oil For Deep Fry
- Salt & Black Pepper To Taste
- Roasted Cashews, And Raisins
» For Malai Kofta Gravy //
- Onion Puree - 1 Cup
- Ginger-Garlic Puree - 2 Tbsp
- Tomato Puree // 1 Cup
- Green Chili, Chopped - 1
- Cashew Paste - 1/4 Cup
- Oil - 2 Tbsp
- Butter - 1 Tbsp
- Fresh Cream - ½ Cup
- Salt As Per Taste
- Cumin Seeds - 2 Tsp
- Pinch Of Asafetida
- Turmeric Powder -¼ Tsp
- Kashmiri Red Chili Powder - 1 Tsp
- Coriander Powder -2 Tsp
- Garam Masala Powder -½ Tsp
RECIPE INSTRUCTIONS
» How to Make Malai Kofta Balls
- Take a mixing bowl. Add grated potatoes, grated paneer, salt, pepper powder, chopped green chili, and bread crumbs.
- Mix well to make the dough, and make ping pong size balls.
- Flatten with the palm, and add 1 roasted cashew and raisins.
- Bring together all side in the center and form into a ball again.
- Flatten to make a cylinder shape, and roll it on all purpose flour.
- Repeat the same process with rest of the dough.
- Heat oil in a pan, and deep fry all balls till they turn golden brown.
» Method For Gravy: //
- Heat a pan, and add butter and oil to it. Now add cumin seeds, asafetida and saute till they splutter.
- Add onion puree, and cook for about 5 minutes. Now add ginger-garlic paste to it. Cook for 3-4 minutes.
- Now add cashew paste to it. Mix well and cook for another 5 minutes.
- Add tomato puree, and saute it covered for 5 -7 minutes on medium heat.
- Now add salt, red chili powder, turmeric powder, coriander powder, garam masala and mix them thoroughly.
- Cook for another 5 minutes. Add fresh cream and mix well. Cook for 2-3 minutes and add chopped green chilies.
- Cook for 3-4 minutes. Add some water if needed and cook for few more minutes. Your gravy is ready now.
- Add Kofta balls to the gravy, only when you are ready to serve.
- Dhaba style Malai Kofta is ready to enjoy. Garnish it with coriander leaves and serve hot with your favorite bread.
