RECIPE INGREDIENTS
» For The Spinach Puree:
- 1/2 cup blanched spinach (palak)
- 1 teaspoon cumin seeds (jeera)
- 1 inch ginger (adrak), peeled
» For Poori/Puri:
- 1 1/2 cups whole wheat flour (gehun ka atta)
- 2 tablespoons oil for making dough
- Salt to taste
- Water, if needed
- Oil for deep-frying puris
RECIPE INSTRUCTIONS
» How to Make Spinach Puree:
- Add blanched spinach, cumin seeds, and ginger to a blender.
- Blend to make a smooth puree. Keep it aside.
» How to Make Palak Poori/Puri:
- Add the whole wheat flour, salt, and 2 tablespoons of oil to a mixing bowl.
- Mix well until oil is incorporated.
- Add spinach puree a little at a time and knead into a stiff dough.
- Apply a little oil to the dough.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- After 30 minutes, divide the dough into 3 equal portions and roll out each portion into a thin log as shown in the video.
- Cut each log into ½-inch pieces.
- Roll each piece into small rounds of 5-inches diameter.
- Heat enough oil in a pan for frying.
- Now slide one rolled out poori/puri into the hot oil.
- Lightly press it with a spatula so that it puffs up.
- Fry them till they turn golden brown from both sides.
- Transfer fried palak poori to a kitchen towel.
- Serve palak poori with Aloo Tamatar Ki Sabzi or any Chutney.
RECIPE NOTES
- To check if the oil is hot enough, add tiny dough pieces to the oil, if it rises up immediately then the oil is ready.
