RECIPE INSTRUCTIONS

» Prep peaches & veggies:

  1. Cut the peaches in half, remove the pits, and slice them. Also, dice the red bell pepper and slice the roasted green chili peppers. Additionally, thinly slice the red onion, separate the onion slices, and keep them all aside.

» Make dressing:

  1. To a glass jar or a bowl, add extra virgin olive oil, balsamic vinegar, lemon juice, Dijon mustard, salt, and freshly ground black pepper. Shake it well until everything is well combined.

» Assemble the peach salad:

  1. Spread the peach slices on a large plate or in a serving bowl. Layer the red bell peppers, grilled green chilies, and onion slices over the peach slices. Also, sprinkle with goat cheese, mint leaves, basil leaves, and toasted almonds. Drizzle the prepared Dijon mustard dressing over the salad. Toss everything together and enjoy your refreshing Peach Salad as a side with Carrot Cheese Chips or chili cheese toast.

RECIPE NOTES

  1. To make it vegan, swap honey for maple syrup and use vegan cheese in this recipe.
  2. In this salad, I have used toasted chopped almonds. You can also use other nuts like toasted pecans or toasted walnuts to add a crunchy texture and a nutty flavor.
