RECIPE INGREDIENTS

- 1 large-sized onion, chopped
- 1 large-sized potato, chopped
- 1 cup pumpkin rind, chopped
- Pinch of asafetida
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon coriander powder
- Salt as per taste
RECIPE INSTRUCTIONS

- Heat oil in a pan over medium heat.
- Once hot, add asafetida, cumin seeds and mustard seeds. Sauté for a few seconds.
- When the seeds start to crackle add add chopped onions and saute for a minute.
- Add salt, turmeric powder and mix well. Saute for another minute.
- Add chopped potatoes and cook for 2 more minutes.
- Now add chopped pumpkin rind and mix well and cook 1 minute.
- No add 3 tablespoons water and mix again. Cook covered for 5 minutes. Stir occasionally. Cook for few more minutes if potatoes are still raw.
- Add coriander powder, red chili powder and mix well.
- Mix well and cook for 2 minutes and remove from heat.
- Serve hot with steamed rice or any bread of your choice.
