RECIPE INGREDIENTS
» For Rajasthani Tamatar Ki Chutney:
- 6 medium-sized juicy tomatoes, diced
- 2 tablespoons olive oil
- 4 garlic cloves (lehsun), chopped
- 1 tablespoon mustard seeds (rai)
- Salt, as per taste
- 2 medium-sized onions (pyaaj), chopped
- 4 tablespoons white/brown sugar, or as per taste
- 1/4 teaspoon garam masala powder
- 1/4 teaspoon turmeric powder (haldi powder)
- 1 teaspoon red chili powder (lal mirch powder)
- 2 medium-sized dried red chilies (sukhi lal mirch)
- 1 tablespoon coriander powder (dhania powder)
RECIPE INSTRUCTIONS
» Making Rajasthani Tamatar Ki Chutney:
- Heat oil in a heavy bottom pan. Add the mustard seeds to it.
- When they start to crackle, add dried red chili, chopped garlic, and onions. Saute for 3-4 minutes.
- Now add tomatoes and cook for about 1-2 minutes.
- Add red chili powder, coriander powder, garam masala powder, turmeric powder, salt, and sugar. Mix well, and let it cook on low heat for about 15-20 minutes.
- Stir occasionally to prevent chutney from sticking to the bottom. Remove from heat, when the chutney pulpy and soft.
- Let it cool completely and transfer to an airtight glass jar.
- Serve it with stuffed partaha or puri. You can refrigerate if for up to 3-5 days.
RECIPE NOTES
- You can replace brown sugar with the same amount of white sugar, maple syrup, honey, or jaggery.
