Sev Stuffed Paratha Recipe - How To Make Bhujia Paratha

RECIPE INGREDIENTS
» For Sev Masala Stuffing:
- 1/2 cup onions (pyaaj), chopped
- 1 tablespoon coriander leaves (hara dhaniya), chopped
- 2-3 green chilies / hair mirch, chopped
- 1/2 teaspoon red chili powder / lal mirch powder
- 1 teaspoon dried mango powder / amchoor powder
- 1/4 teaspoon salt / namak
- 1 teaspoon roasted cumin powder (bhuna jeera powder)
- 1/2 cup sev
- 1/2 cup bhujiya
- 1/2 teaspoon chaat masala
» For The Dough:
- 2 cups whole wheat flour
- 1 tablespoon oil
- 1/4 teaspoon salt
- Water for kneading dough
» For Sev Paratha:
- Some extra wheat flour for rolling
- Ghee or oil for roasting
RECIPE INSTRUCTIONS
» Making Sev Masala Stuffing:
- In a mixing bowl, add onions, coriander leaves, green chilies, dried mango powder, salt, red chili powder, roasted cumin powder, sev, and bhujiya.
- Mix thoroughly to combine. Keep it aside.
» Making Paratha Dough:
- Add wheat flour, oil, salt, and mix well.
- Now, add enough water to make a soft dough.
- Apply a little oil to the dough.
- Cover with a muslin cloth and set aside for 30 minutes.
- Divide the dough into 8 equal-sized balls and keep aside.
» Making Sev Stuffed Paratha:
- Spread some flour and roll out one dough ball into a circle of 4? diameter.
- Place 2-3 tablespoons mixture in the center of the dough circle.
- Bring together all the sides in the center and seal tightly.
- Press lightly to seal the edges well.
- Roll out again into a circle of 6? diameter with the help of some flour.
- Heat a pan. Roast rolled circles from both sides.
- Apply a little ghee/oil/butter on both sides.
- Roast until golden brown from both sides. Repeat with the remaining dough and filling to make more parathas.
- Serve Sev Stuffed Paratha hot with your favorite chutney, pickle, and raita.
RECIPE NOTES
- Always make the stuffing fresh, it tends to get soggy fast.
- I used crunchy sev, but you can also make these parathas with your leftover not-so-crispy sev.
- You can make this Sev Paratha either with Ratlami Sev, Bhujiya, or any of your favorite sev.
- I have used butter for roasting, but you can also use ghee or any vegetable oil.
