RECIPE INGREDIENTS
» For Carrot Brownies:
- 1/2 cup plain or all-purpose flour
- 1/3 cup salted butter (also add 1/4 teaspoon salt, if using unsalted butter)
- 1 medium-sized egg
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup shredded carrots
- 1 teaspoon ground cinnamon
» For Serving:
- Vanilla custard
- Vanilla ice-cream
- Caramel sauce
RECIPE INSTRUCTIONS
» Making Carrot Brownies:
- Preheat oven to 300°/150C. Line 8x4 inch pan and spray with non-stick cooking spray.
- Place butter in a microwave safe bowl and heat in microwave until 2/3rd of the way melted, for about 25 seconds
- Mix in sugar, stirring until butter is fully melted, then add egg and vanilla extract. Mix well.
- Add flour and cocoa powder and mix just until combined.
- Stir in grated carrots, and cinnamon. Pour into prepared pan and bake 20-25 minutes.
- Allow the brownies to cool before frosting.
- Allow the brownies to set at least one 30 minutes in the fridge before cutting.
» For Serving:
- Drizzle vanilla custard right over the brownies.
- Top brownie with a dollop of vanilla ice-cream and drizzle some caramel sauce. Enjoy with a glass of milk or coffee!
RECIPE NOTES
- You can replace butter with oil or baking margarine. Make sure to add 1/4 tespoon of salt if using oil or baking margarine
