  1. Finely chop the garlic cloves and onion. Set them aside.

» Boil Spaghetti

  1. Add boiling water to a pot, and add salt to it. Give it a stir. Alternatively, bring the water to a boil, then add the salt. Add the spaghetti or pasta to the pan.
  2. Cook until al dente or according to package instructions. To check if the spaghetti is done, use a knife to cut a piece - it should be tender but still firm to the bite, with no hard center. Reserve 1/2 cup of the pasta water before draining.

» How to Make Spinach Spaghetti

  1. Heat a large skillet over medium heat. Once hot, add the olive oil or butter. Add the chopped onions and sauté for about 2-3 minutes, until translucent. Add the minced garlic and cook for another minute until fragrant.
  2. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally. Once the spinach is wilted, add the salt, red pepper flakes, black pepper, and oregano. Stir well to combine.
  3. Add a ladle of pasta water and stir to combine. Add the cream cheese to the skillet and stir until it melts and coats the spinach.
  4. Stir in the crumbled feta cheese, lemon zest, and lemon juice for a fresh zing. Mix well and cook until the feta is almost melted.
  5. Add the cooked spaghetti to the skillet with the spinach mixture and toss well to combine. Add more reserved pasta water as needed to adjust the consistency. Your creamy, zesty spinach pasta is ready. Garnish with extra feta cheese and serve hot.

RECIPE NOTES

  1. Use fresh spinach for the best flavor and texture. If you don't have fresh spinach, frozen spinach will also work in this recipe.
