RECIPE INGREDIENTS
» For Tahini Garlic Paste //
- Garlic clove, chopped - 2
- Ginger, chopped - 1 teaspoon
- Tahini paste - 1 teaspoon
- Soya sauce - 2 teaspoons
- Salt - 1 teaspoon
- Ground pepper - ½ teaspoon
» For Veggie Szechuan sauce //
- Olive oil - 1½ tablespoons
- Julienned bell pepper, yellow - ¼ cup
- Julienned bell pepper, orange - ¼ cup
- Spring onions, sliced diagonally - ½ cup
- Homemade schezwan sauce - 100 g
- Salt to taste
- Ground Pepper - ½ teaspoon
- Hot sauce - 1 teaspoon
- Tomato ketchup - 1½ tablespoons
» For Carrot Fettuccine //
- Carrots, peeled - 8-10
- Ice cold water
» For Garnish //
- Spring onions and sesame seeds for garnish
RECIPE INSTRUCTIONS
» Making Carrot Fettucinni //
- Peel carrot into ribbons.
- Soak them in ice cold water for 15 minutes.
- Drain and set aside.
- In a mortar pastel, add ginger, garlic, tahini paste, soya sauce salt, pepper and grind well.
» Making Veggie Szechuan Sauce //
- Heat oil in a pan.
- Once hot, add julienned bell peppers (yellow + ornage), spring onions and saute for 1 minute.
- Add tahini garlic paste, szechuan sauce. Mix well and cook for another minute.
- Add salt, pepper, hot chili sauce, and mix well. Cook for 1 minute.
- Add tomato ketchup and cook 2 minutes.
- Turn off heat. Add carrot ribbons.
- Toss well until combined.
- Add carrot fettuccine to a serving dish, top with fresh carrot ribbons, spring onions and sprinkle with sesame seeds.
- Serve immediately, and enjoy!
