RECIPE INGREDIENTS
» For Veg Schezwan Noodles:
- 200 g noodles (I am using chow mein noodles)
- 2 cups water
- 1/4 teaspoon salt
- 2 tablespoons oil
- 1 medium-sized onion, sliced
- 1 large-sized red or green capsicum, (bell pepper) cut into ¼-inch strips
- 1/2 cupcabbage, sliced
- 1 medium-sized carrot, cut into strips
- 2 tablespoons + 2 tablespoons spring onion greens
- 1 teaspoon soya sauce
- 1 1/4 teaspoons white vinegar
- 1 teaspoon schezwan sauce (add more, if you want really spicy noodles)
- Grond pepper to taste
- Salt to taste
- 1 teaspoon sesame seeds
RECIPE INSTRUCTIONS
» How to Make Veg Schezwan Noodles:
- Boil water along with 1/4 teaspoon salt in a pan.
- Add noodles and boil until cooked.
- Drain the noodles and add drizzle 1 teaspoon oil.
- Toss well and set aside.
- Heat 2 tablespoons oil in a pan/wok.
- Add 1 tablespoon crushed ginger-garlic and sauté for 30 seconds.
- Add onions, carrots, beans, bell pepper, cabbage, and saute on high heat for 2-3 mins.
- Add white vinegar, soya sauce, schezwan sauce, and mix well.
- Now add the boiled noodles, spring onion greens, ground black pepper, and salt to taste.
- Toss everything well.
- Garnish Veg Schezwan Noodles with some spring onions and sesame seeds. Serve hot.
RECIPE NOTES
- The key to making the best veg noodles is to stir-fry veggies continuously on high heat this would give a nice smoky flavor to this noodles.
- I have made it in a pan, but I would suggest you make it in a wok if you have one because tossing is easy in a wok.
- I have used sliced veggies for making these noodles, but you can also chop, shred or julienne your veggies.
