Vegan Thai Green Curry Vegetable Noodles (Video Recipe)
These rice noodles has a mix of ginger, garlic, rice vinegar, tamari, chili flakes, sesame seeds, salt, pepper and green curry paste with lots of veggies.

RECIPE INGREDIENTS
» For Vegan Thai Green Curry Vegetable Noodles
- Oil (I used peanut oil) - 2 tbsp
- Pad thai rice noodles - 250G
- Red onion, sliced - 1 medium
- Garlic, finely chopped - 1 tbsp
- Ginger, finely chopped - 1 tbsp
- Button mushrooms, sliced - 4
- Green peas - ¼ cup
- Cabbage, thinly sliced or chiffonade - ¼ cup
- Coconut milk - 1½ cup
- Salt and pepper to taste
- Chili flakes - 1 tsp (optional)
- Green curry paste - 3 tbsp
- Carrots, julienne - 2
- Tamari or soya sauce - 1 tablespoon
- Rice vinegar - 1 tbsp
- Sesame seeds - 1 tbsp

- Cilantro for garnish
- Roasted peanuts
- Sesame sesame seeds
- Chili, sliced
RECIPE INSTRUCTIONS
» How to Make Vegan Thai Green Curry Vegetable Noodles //
- Prepare the pad thai noodles according to package directions. I soaked Rice noodles in hot water for 10 minutes.
- After that, I then drained them using a strainer.
- Heat oil in a medium skillet on medium heat.
- Now add the onion, and sauté until nearly translucent.
- Add the garlic and ginger and sauté for another minute.
- Add the mushrooms, carrot, cabbage, and sauté for 4-5 minutes.
- Add green curry paste, green peas and cook for 3 minutes.
- Add salt and pepper to taste, and sauté for 1 minute.
- After 1 minute, add rice vinegar and tamari and sauté for 1 more minute.
- Add coconut milk and bring the mixture to a boil. (At this stage you can add more coconut milk, if you think gravy is too thick.)
- Add chili flakes and sesame seeds and cook for 2 minutes.
- Remove from the heat.
- To serve, divide the cooked noodles among 4-5 bowls.
- Top them with curry.
- Decorate with roasted peanuts, and sprinkle with sesame seeds, cilantro and serve.
