Vegetable Tahiri Recipe - Aromatic One Pot Tehri

RECIPE INGREDIENTS
» For Vegetable Tahiri:
- 1.5 cups basmati rice, rinsed and soaked for 30 minutes (you can also use any other long-grain rice)
- 3 tablespoons ghee/oil
- 1 black cardamom (moti or hari elaichi)
- 2 cinnamon sticks (dalchini)
- 1 star anise (chakra phool)
- 4 cloves (laung)
- 4 black peppercorns (kali mirch)
- 1 bay leaf (tej patta)
- 1 teaspoon cumin seeds (jeera)
- 2 small green chilies (hari mirch)
- 1 large-sized onion (pyaaj), sliced
- 1 tablespoon ginger (adrak), crushed
- 2 tablespoons garlic (lehsun), crushed or paste (you can reduce the amount)
- 2 medium diced potatoes (aloo)
- 2 small-sized carrots, diced (gajar)
- 1 cup cauliflower florets (phool gobi)
- 1 large-sized tomato, chopped
- 1/2 cup green peas (hare matar)
- 1/2 tablespoons coriander powder (dhania powder)
- 1/2 tablespoon red chili powder (lal mirch powder)
- 1/2 teaspoon turmeric powder (haldi powder)
- 1/2 teaspoon garam masala powder
- salt to taste
- 3 cups water
- Cilantro (coriander) leaves for garnishing
- Lemon juice for serving
- Ghee for serving
RECIPE INSTRUCTIONS
» Making Vegetable Tahiri:
- In a pan heat 3 tablespoons of oil/ghee.
- Add bay leaf, black cardamom, cinnamon sticks, star anise, cloves, peppercorns, and let them roast for few seconds.
- Now, add cumin seeds, and let them splutter.
- Once they start to splutter add sliced onions and sauté for 3 minutes.
- Add diced potatoes and cook for 3 minutes.
- Now add crushed ginger, crushed garlic, and mix well. Let them cook for a minute.
- Add cauliflower florets, carrots, and green peas. Mix well and cook for 2 minutes.
- Add tomatoes and green chilies and cook for a minute.
- Now cover the pan with a lid and let it cook for five minutes.
- Transfer veggies to a larger pot, if you are using a separate pan for sautéing veggies like me.
- Now add the soaked rice to the veggie mixture and mix well.
- Now add salt, red chili powder, coriander powder, and mix well.
- Add 3 cups of water a stir well to combine.
- Add garam masala and mix well again.
- Cover the pan and let the rice simmer till its 95% cooked.
- Turn off the heat and let the rice sit for 10 minutes.
- Gently fluff the rice with a spatula and transfer it to a serving dish.
- Garnish with coriander leaves. Drizzle with some lemon juice and ghee. Serve svegetbale tahiri hot with plain yogurt or raita.
RECIPE NOTES
- Pressure cook tehri for 2-3 whistles on medium-high heat.
