Viral Dubai Chocolate

RECIPE INGREDIENTS
» For the chocolate
- 400 g dark or milk chocolate
» For the kunafa filling
- 140 grams (kataifi), shredded phyllo dough
- 3 tablespoons unsalted butter
- 50 grams white chocolate (optional)
- 1-2 drops food coloring (optional)
- 3/4 cup pistachio paste
- 1/4 cup tahini
RECIPE INSTRUCTIONS
» Melt chocolate
- Add dark chocolate to a microwave-safe bowl and melt it in a microwave in 30-second intervals, stirring in between. Alternatively, melt the dark chocolate using a double boiler.
- Also melt the white chocolate in a double boiler or a microwave-safe bowl. Take out about 1.5 tablespoons of white chocolate into a small bowl and add a few drops of orange food coloring to achieve the desired hue. Keep them aside.
» Make the decoration (optional)
- The decoration bar is totally optional; it is just to give it the signature look of the viral Dubai chocolate bar. Using a small spoon, splash white chocolate and the colored chocolate into the bottom of the chocolate molds or a baking dish lined with parchment paper. Place it in the refrigerator and chill for about 10 minutes until set.
- I am also using a sphere ice cube mold to give this chocolate a fun look. Apply a similar white chocolate and orange chocolate layer at the bottom of the sphere ice cube mold and chill for 10 minutes. Pour a thin layer of melted dark chocolate into the molds, spreading it evenly with the help of a brush. Place the molds in the refrigerator to set for about 15 minutes or until set.
» Prepare the filling
- Chop 140 grams of katifi into 1-inch pieces. Set it aside. Heat 3 tablespoons of butter in a medium frying pan over medium heat.
- Once melted, add the kataifi and toast for 7-8 minutes or until the kataifi turns golden brown and crispy. Keep stirring constantly to avoid burning.
- Once done, transfer the roasted kataifi to a mixing bowl. Add the pistachio paste and tahini and mix until well combined. The filling is ready. Set it aside to cool.
» Assemble Dubai Chocolate Bar
- Pour a thin layer of melted dark chocolate into the molds, spreading it evenly with the help of a brush. Place the molds in the refrigerator to set for about 15 minutes or until set.
- Once the dark chocolate layer has set, spread the pistachio filling evenly over it. I am using a pestle to flatten and press it down gently. Once filled, chill the molds for 15 minutes.
- Pour the melted chocolate over the kataifi layer, spreading it evenly. Make sure that all the edges are covered with dark chocolate. Place it in the refrigerator and chill for at least 1 hour or until fully set.
- Once set, remove the bars gently from the mold. Your Dubai Chocolate is ready. Break and enjoy the crunchy, rich, buttery filling.
RECIPE NOTES
- The colorful chocolate splashes give the Dubai Chocolate Bar a signature look but are entirely optional. This step adds visual appeal, but the bars will still be delicious and impressive without it.
- I used a chocolate bar mold, but you can also make this chocolate without any mold. This recipe works perfectly in a baking pan.
