Yeaaaaah! I made some awesome Chocolate Cream Cheese Cupcakes this weekend.
Today is such an awesome day to share something stunning, because it rained heavily, and at the end of it, there was some good sunshine. You know what else was in store as a result of this warm sunshine — A DOUBLE RAINBOW. WOWWW! Never seen something that beautiful.
After this brief gift from nature, let’s get back to the recipe story. I made these cupcakes because I was given an ultimatum. And that was from my little girl who threatened me! 😉
Hahaha, she did not actually threatened me, but shouted for sure. Yeah! These kids are dictators and we are bound to follow their orders. Or may be we just want these tiny rulers to RULE us.
Recently, I have sensed a lot of change in Little-A’s behaviour. She sounds like a BIG girl already. Whenever I spill water or milk accidently she would shout at me, “Maammma, what did you do? Be careful next time.”
And then I would say sorry to her, because she does the same when she makes a mistake. We gotta practice what we preach, sometimes ;-).
But even after I’ve said sorry to her a couple of times, she would still keep repeating the same stuff for a while. I think that works well as a reminder! I don’t actually know when it all started, but she just loves instructing me and her Daddy.
May be she wants to feel in control, and she knows that being bossy is fun sometimes. So we let her be our BOSS, especially when we are on the wrong end. 😉
In addition to that, she also gives a shying naughty smile when she gives us instruction about such basic stuff! And that makes us feel good. She is still a little munchkin. And we enjoy her occasional naughty dictatorship.
Honestly, I just love when this tiny ruler RULES me. She would do it for a while and then she would come to me and hug me tight. “Mamma, I love you soooo much.” And that usually happens after her bout of instructions.
And when I ask her, “Okay, tell me how much you love Mommy?”
She would widen her arms as much she can, and would say, “thiiiiissss much”. Just so love this feeling.
So her last week’s demand was chocolate cupcakes. She has been asking for cupcakes the whole week. I then promised her to make them during the weekend.
I am proud that I did not let myself down and kept my promise. So after a week’s demand I made these heavenly treats for her.
She really enjoyed every single bite of these cupcakes, as they came to her after a loooong wait. She got to eat her favorite cupcakes, but after extensive requests. So they were quite precious for her.
She said thank you to me for making these cupcakes.
Do you want to know why did I make her wait till the weekend for these cupcakes?
This is because I wanted to make cupcakes on the weekend because I myself wanted to avoid eating these sweet treats during the week. And I knew if would bake these on a weekday, these would be my breakfast, lunch and dinner, and then Little-A wouldn’t get to eat much of these.
So that was the reason to make them during the weekend.
But I didn’t realize that while I was doing this, I taught her a lesson unknowingly. A lesson of delayed gratification. Wow! That’s awesome. Kids are willing to learn all new things, but only if they are fun for them! 🙂
Besides giving this lesson, I also got 100’s of kisses and hugs in bounty. I think that was more than a fair deal. 🙂

Let’s now learn to make Chocolate Cream Cheese Cupcakes Topped with Fresh Blueberries.
For the Cream Cheese Filling:
In the bowl of a standing mixer fitted with the paddle attachment, beat the cream cheese and the sugar on medium speed until the sugar is well combined and the mixture is lump free.
Scrape down the sides and bottom of the bowl and add the egg, vanilla, lemon juice and salt, beating until completely incorporated, about 1 minute.
For the Chocolate Cheesecake Cupcakes:
Preheat the oven to 350 degrees F/180°C. Prepare 12-cup muffin pan muffin pan by lining with muffin liners or by spraying with cooking spray. In a microwave safe mixing bowl, melt the butter. Stir in sugar, eggs, vanilla extract, vinegar and salt.
Once combined, fold in cocoa powder, baking powder and flour.
Mix together the dry with the wet ingredients until well combined.
Fill muffin cups with 2/3 full of batter. Add 1 heaping tablespoon of the cream cheese filling to each cup. Repeat until all batter and filling have been used up. Bake 20-25 minutes or until cake portion comes out clean with a toothpick.
Move the muffin pan to a wire rack and let cool for 15 minutes.
Gently loosen the muffins with an offset spatula or small knife, remove the muffins from the pan, and let them finish cooling on the wire rack. Let the cupcakes cool in pan for 5 minutes before removing and transferring to wire rack to cool completely.
Once cool, top with whip cream, fresh blueberries and toasted marshmallows. Sprinkle some icing sugar and enjoy!

INGREDIENTS
For the Chocolate Cheesecake Cupcakes
- unsalted butter - 18 tablespoons
- granulated sugar - 2 cup
- eggs - 2 large
- salt - ½ teaspoon
- vanilla extract - 2 teaspoons

- all-purpose flour - 2 cup
- cocoa powder - 1 cup

For the cream cheese layer
- cream cheese, softened - 250 gms
- sugar - 1⁄4 cup
- egg at room temperature - 1 large
- salt - 1⁄4 teaspoon
- fresh lemon juice - 2 teaspoons
- vanilla - ½ teaspoon
For Serving //
- blueberries - ½ cups
- icing sugar to sprinkle for garnish , if desired
- toasted marshmallows

Making Cream Cheese Filling //
