That means we are gonna have a long weekend this time. Woohhoooo!
This is a lazy weekend time for me. You know how much I love lazy & crazy weekends. A time when I can sleep for long hours! Oh, that’s the best part of a weekend for me! And also we can have as much as goodies we want, and that’s the best part of the weekend! 😉
Long weekend plans: Today we are gonna stay at home and tomorrow we will head to the beach, but only if the weather is warm and sunny like today! Predictions say that weather is warm tomorrow as well, but you never know. So we are keeping our fingers crossed for that!
Then Saturday is a shopping day, and Sunday we have plans for some spring cleaning time! That’s the boring part of this long weekend! But other than that long weekends are so much fun. This way Daddy-Mommy would teach Little-A a thing or two. 🙂

This is a very basic egg sandwich which I have made after a long time and the comeback of this beauty was a blast. Because I have made us this for all our meals last week — breakfast, dinner, lunch, and brunch too. And why not, when you have a good sandwich then you can have it for any meal.
This sandwich is my childhood favorite:
My love of sandwiches started as a little kid. Mom would make so many sandwiches for my school lunches. And the egg salad sandwich was one of those which I liked so much.
As I grew up, I did some variations and the present day Curried Egg Salad Sandwich is a sandwich which has evolved over these years. But the one thing which hasn’t changed at all is the taste — which is still the best.
Who could say No: Have you ever met someone who eats eggs and doesn’t like egg salad sandwich? I haven’t. A perfect way to turn leftover hard-boiled eggs into such a treat.
Potato chips are a nice addition: Little-A wanted some potato chips in this egg salad sandwich when I made it the last time. Wow! That sounded amazing. Potato chips addition to egg sandwich is kind of genius idea. Isn’t it?
So I added potato chips to her sandwich and she loved it! However, I wanted to keep this recipe towards a healthier side, that’s why I did not add chips to this one. But please feel free to add it to your sandwich if you want it that way! 🙂

I combined eggs with cucumber, onion, chili with pepper and salt. And a hint of curry powder which added a bit of spice. It was such a great flavor to egg salad. And then dijon vinaigrette which takes it up a notch and adds a pretty yellow color. Mixed everything well.
Spread some margarine on toasted bread. Some arugula leaves. A gorgeous amount of egg salad. Then a drizzle of sriracha cover with toast. And that was it. DONE. 🙂

Making Curried Egg Salad Sandwich //
- Heat a grill pan, and toast or grill bread slices.
- Once grilled, set them aside.
- Add eggs, cucumber, onion, chilies, curry powder, salt, pepper, dijon vinaigrette to a mixing bowl.
- Stir well until combined.
- Smear margarine/butter on toasted bread slices.
- Spread arugula lettuce, and top with 2 spoonfuls of curried egg salad.
- Add some more arugula top and drizzle with sriracha sauce.
- Close sandwich with toasted and buttered bread slice.
- Cut each sandwich in half.
- Transfer to a serving plate and serve with some hot tea/coffee.

- 1/8 teaspoon ground pepper
- 4 bread slices

- 2 tablespoons cucumber, chopped
- 1/2 red onion, chopped
- 1 tablespoon dijon vinaigrette
- 1/2 green chili, chopped (I used fresco chili pepper)
- Arugula lettuce
- 2 teaspoons margarine or butter

- Sriracha sauce
