It’s a Pizza day! Yes, it’s a Pizza Day! Yay, it’s a pizza Wednesday!!
Well, it’s more of a HOT HOT pizza Day! Yeah, it’s hot! Because, it has a drizzle of hot pepper sauce and a sprinkle of hot pepper flakes. Uuuuuumm. Even writing about these hot ingredients are making my mouth water. I love hot and spicy food. And this Pizza here is a heavenly combo of hot, sweet and tang. Yeah, the tropical flavors of mango makes it tangy and sweet. And the aroma of garlic is deadly when combined with spinach.
And anyways, spinach in a pizza doesn’t need any description. We all know, it’s deadly in a good way. Even those people who don’t like spinach would still love to eat spinach pizza. My two dear ones who don’t love spinach but they just LOVE spinach pizza.
My daughter and my MIL. They are not big fans of spinach as a veggie. But they both are die hard fans of spinach pizza. So moral of the story is that pizza can make you eat anything! 😉
So the name of the mighty pizza which I am sharing today is ‘Garlicky Spinach Mango Tomato Pizza with Hot Pepper Sauce and Flakes’.

Alright so we started on a good note. Now a little about life in general.
I am rarely sleeping enough these days. I gotta get up early. And everyday I make plan to go to bed early, so that I can get a good amount of sleep. If you are reading my blog posts regularly, you would know how much I love a good night’s sleep. I am a sleepy head. 🙂
You know the feeling when you make a promise of going to bed early, and you still are not doing so? Especially when you can. Well in my case, I go to bed at 10:30 pm according to the plan. But sleeping on time is STILL the hardest thing ever.
As soon as I lay down on my bed, so many things start running in my head. So many exciting ideas for the coming day. So many new recipe ideas start to pour in. And the funny part is that I virtually make each and every recipe lying on my bed!
😉 I am so much activated that I just want to go out of the bed right then and make everything!
And these ideas are never ending. They really don’t let me sleep at all. No matter how hard I try. And I finally end up sleeping at about 2:00 am, and then I have to get up at 6:30 am. Yes, the feeling of sleeping late makes me anxious, typically when I know I gotta get up early.
And it becomes so hard to come out of the bed in the morning.
I still could not understand why do I get all of the best ideas at a time when I plan to sleep? And in the morning most of them are gone. Grrrr. So, sometimes what I do is I just text myself if I get a really thrilling idea.
So that when I check my phone in the morning, I would remember about that idea. 😉
Do you guys have any ways of recollecting such ideas when you wake up?
Yeah that is my current situation. BUT I think it’s just a small phase and it’s gonna be fine after a couple of days. Really, why is getting out of the bed so hard? It’s probably my least favorite part of the day. I think I just love my bed, and my sleep.
But as soon as I am out of my bed I drink up an entire cup of strong coffee, which makes me feel refreshed. And after that I eat some mint. And that mint does the magical thing of waking up all my senses. I feel fully charged. Really, I do — ready to take on anything.
And at that time if somebody would tell me to go back to bed and sleep as long as I could, my reaction would be something like this, “What? No way. I can’t sleep in the morning. I feel so active. So many things to do.”
I know that people say coffee wakes them up, and after trying it myself, I could say they are right. I feel an extra energy boost after my morning coffee. No more sleepy at all.
I come so out of my tiredness at the moment because of a cup of storng coffee and mint. 🙂
Oh! I got carried away. Now let’s talk more about today’s recipe, ‘Garlicky Spinach Mango Tomato Pizza with Hot Pepper Sauce and Flakes’.
It’s cool because of all those veggies and fruits. That means this pizza is HEALTHY too. WOW! OH! Garlic sautéed spinach, mangoes chunks, sliced tomatoes — they pair perfectly with the mozzarella. AWESOMELY GOOD.
For the sauce, I used a regular pizza sauce. I added a good amount of cheese, but not too much.
And topping is just awesome. For the toppings, it’s really just some mozzarella slices, and shredded mozzarella. Garlic sauteed spinach. Mangoes, tomato slices, sprinkle of oregano and garlic powder.
That’s it. A nice crust, melted cheese and garlicky spinach, mango and tomatoes. A drizzle of hot pepper sauce, and a sprinkle of pepper flakes, Seriously, yummm! And do you guys see these pretty tomatoes? This is certainly a healthy food.

The bottom line is, there’s simply nothing not to love about a slice of this pizza. Ok, now I am done.

Heat 1 tbsp oil. Add crushed garlic and saute for 2 minutes. Add spinach, pinch of salt and pepper powder. Saute for 5 minutes. Remove from heat and let is cool.
Preheat the oven to 325°F/175°C. Lightly flour a counter to roll the dough. Use your hands or a rolling pin to roll the dough out until you have a flattened disk of desired size and shape.
Place the pizzas on a floured baking pan and then use your hands to gently tug. Spread pizza sauce over the pizza dough. Sprinkle grated cheese.
Now add sliced cheese. Add spinach, mango and tomato slices. Sprinkle some oregano and garlic powder on top. Bake the pizza in a middle rack for 25 minutes or until the cheese is all melty. Transfer pizza to the lowest shelf and bake for 5-7 minutes.
This would give such a nice crisp to pizza. Remove the pizza from the oven and and sprinkle with some pepper flakes, dried oregano and drizzle hot pepper.
Slice into desired shape! Enjoy!

- frozen mango chunks - ½ cup
