Welp, I have a reason for that. See, you love cheesecake. I love cheesecake, we all love cheesecake. Right? So let’s call it a cheesecake day. I know, we don’t need an excuse to eat cheesecake. We can eat them whenever we like.

But naming those days special, and then eating them on that day is so much fun sometimes!

Bite sized desserts are the best: Today’s post starts and ends with sweetness and that is ‘No Bake Strawberry Cheesecake Bites’. I seriously can’t get enough of these bites, because they are everything you would want in a dessert and much more.

All that is good and wonderful about a strawberry cheesecake rolled up into a bite-sized ball of deliciousness.

Perfect for any season: No matter what is the weather outside, these bites would make a perfect seasonal dessert. These little strawberry cheesecake bites are very delicious, quick and easy. And they sure will satisfy your cheesecake cravings.

My love for cheesecakes: I love strawberry cheesecake because strawberries and cheesecake go well together. And I can have it anytime. And these cheesecake bites are Strawberry Cheesecake inspired.

But if you don’t want strawberries, then you can add any berries or cherries — they will still taste good.

Another plus of making these no bake bites: With these cheesecake bites you don’t have to worry about finishing the whole cheesecake. But that doesn’t mean that I am saying we always have to stick with just one, or two, or three bites.

But at least the option of eating less is there, right? 😉 Plus, they are no bake and they are perfectly bite sized. You can have them for evening desserts or snack or eat them just like that! 🙂

Don’t always rely on your instincts: Every Time I make these bites, I assume that I can enjoy this dessert for at least a few days. But they don’t last that long. Two or may be three sweet eaters in my family don’t let them stay in the freezer for long.

😉 A day or two is the maximum time limit when you can find them in my freezer.

For coating cheesecake bites I chose 3 of my family’s favourites.

Marie cookie crumbs: Abhishek’s favorite.

Dessicated coconut: Little-A’s favorite

Chocolate sprinkles: My favorite.

There you go. You are free to use any of your family’s favorites for coating these cheesecake bites.

What you’ll need: Cream cheese, strawberries, lemon juice, whipped cream, powder sugar, vanilla, marie cookies, desiccated coconut and chocolate sprinkles.

How can you make them? Whip cream cheese, sugar, and vanilla. Add strawberries and lemon juice and whip again. Add whipped cream and fold gently. Cover this and place in the freezer for at least 2-4 hours, or until well set.

Scoop out into 1 inch balls and roll those balls in the cookie crumbs or desiccated coconut or chocolate sprinkles. As soon as you are done with this step, you can have them right there and then. Or whenever you like something sweet just pick them up and pop in your mouth!

Storage: Store them in an airtight container in the freezer for up to 1 week, only if you can hide them from prying eyes for that long! 🙂 You can keep them in the freezer to grab a bite when the sweet cravings hit you at times!

How to Make No Bake Strawberry Cheesecake Bites //

  1. Using an electric mixer, mix the softened cream cheese, vanilla extract, and sugar together until well blended.

  • Powdered sugar - ½ cup (64g)
  • vanilla extract - 1 tsp
  • Lemon juice - 1 tsp (optional)
  • Frozen or fresh raspberries - ½ cup ( let frozen berries sit for 5-7 mins at room temperature before using)
  • Marie biscuits/graham crackers - 10-12
  • Whipped cream - 1¼cup (300g)
  • Chocolate sprinkles - ¼ cup (30g)
  • Desiccated coconut for rolling - ¼ cup (30g)
