Ingredients

  • Hung Curd: Strained yogurt or hung curd is the main ingredient of this dessert, creating the base of this creamy dessert. Hung curd is also known as Matha or Chakka in Hindi languages.

Making hung curd is very easy at home, but if you don’t want to use hung curd, then you can also use Greek yogurt or Turkish yogurt to achieve a similar rich and creamy texture.

  • Pineapple: To infuse the dessert with tropical pineapple flavor, I have used canned pineapple in this recipe. But you can also use fresh, ripe, and sweet pineapple puree.

  • Pineapple essence: To enrich this dessert with an intense pineapple taste, I have used a few drops of pineapple essence. Adding this essence is optional but highly recommended if you want to devour classic flavors.

  • Sugar: Used to sweeten the shrikhand according to your taste preferences.

  • Saffron-Infused Milk: I have added about 2 tablespoons of saffron-infused milk to add a hint of luxury and color. To make saffron-infused milk, you need to soak about 12-15 crushed saffron strands in warm milk for about 10 minutes.

  • Cardamom Powder: Ground cardamom adds a subtle and aromatic Indian touch to the dessert.

  • Chopped Nuts (Optional): I have added some chopped almonds, pistachios, or cashews. Feel free to add any of your favorite nuts here.

  • Edible color: I have also added a few drops of orangish-yellow food color. But it is only added for presentation, so adding the food coloring is entirely optional here.

  • Optional Garnishing: For garnishing, I have used saffron strands, nuts, and dried rose petals.

Coconut Pineapple Yogurt

Love Pina colada flavors or pineapple coconut smoothie? Then you would love coconut pineapple shrikhand. To make this version, swap hung curd with coconut hung curd. Also, add some coconut flakes to this shrikhand.

Pineapple Shrikhand Tart

You can also use this refreshing Shrikhand as a tart filling. To make a tart, simply make a crust using graham cracker, digestive biscuits, or shortbread and butter. Then top it with the pineapple shrikhand.

Simply add the shrikhand to a freezer-safe container and freeze for about 4-6 hours. Scoop your pineapple shrikhand frozen yogurt into a cone or a cup. You can also pair it with Pineapple Ladoo, warm gulab jamun, ghevar, or malpua.

Tips & tricks to make the best Pineapple Shrikhand

  1. Hung Curd: For making hung curd, I have used 1 kg of thick yogurt and strained it for 5-6 hours to remove excess moisture and get a creamy consistency.

  2. Other Yogurt: After straining, I’ve got about 500 grams of hung curd. You can also use strained Greek yogurt or even Turkish yogurt here.

  3. Pineapple: I have used canned chopped pineapple here, but you can also use freshly chopped or pureed pineapple here. Make sure to strain the extra juice.

  4. Sweetener: Taste your Pineapple Shrikhand as you add sugar, and adjust the sweetness to your taste preference.

  5. Adjust Yogurt Consistency: My recipe made a really creamy and thick shrikhand. If you want even thicker shrikhand, then strain it for a longer time to remove more whey. Using full-cream yogurt gives the best taste and texture, but you can also use low-fat yogurt for making hung curd.

  6. Garnish: I have garnished this shrikhand with saffron-infused milk, chopped nuts, and dried rose petals, you can add any garnish of your choice. 

  7. Ripe Pineapple: When using fresh pineapples, make sure you use ripe and sweet pineapples, as they give a more intense pineapple flavor to this shrikhand.

  8. Chilling: This Shrikhand tastes best when it’s served chilled. So make sure to refrigerate it for a few hours before serving. This chilling time will enhance the flavors and infuse it with dessert flavors.

  9. Drain liquid: If you are used to canned pineapple like me, then make sure to drain the excess liquid.

  10. Other Fruits: If you like a fruity taste, then you can add other fruits to this shrikhand.

  11. Edible Food Color: I have added a pinch of orangish-yellow food color. It is only added for presentation purposes, so if you don’t want food color, then you can omit it.
