Well, I am enjoying the beginning of this week with ‘Mushroom Pepper Pilaf With Grilled Veggies, Honey Mustard Yogurt, And Chili Peanuts’.
Wait wait! I know this name might sound complicated. But believe me, this certainly is not complicated at all! Instead, this is the best kind of Monday food for everyone.
For everyone, really? Yes, this meal is best for those who are celebrating Meatless Mondays, and also for those who are vegetarian. So basically, this is suitable for everyone. That’s the beauty of this meal! 🙂
Pilafs are one of the most comforting meals for me. Want to know why? Because they are quick and easy to make and also they fulfill all the requirements of wholesome meals.
And it has grain + vegetables + spices! And you can also add meat! That is why I said Pilaf is a wholesome meal.
It is delicious on pretty much any given day, but it sure helps to get you through a lazy Monday. Welp, I think this surely would help me. What do you think, would this help you too? I think it would! 🙂
Sometimes making traditional recipes with a slight twist by adding your favorite things is kinda fun. Isn’t it? I hope you will agree with me.
Here I go again trying this traditional meal with the addition of some new ingredients. And this is as awesome as it could get!
The flavors are awesome and I promise you would simply love this meal.
Just imagine a beautiful platter full of spicy pilaf, paired with sweet-spicy yogurt and grilled veggies, topped with spicy chilli peanuts. YUMMMYYY!
And if you love Indian food, then you love spices. If you love spices then you are gonna love this pilaf. So that means you gotta try this meal at least once. I mean, you will surely fall in LOVE with this one.
I don’t think anyone who loves Indian meals can say no to this, unless they hate spices. 😉 But there is also a solution there — they can avoid curry powder to make this pilaf.

If you think chili peanuts are too hot for you, simply replace them with plain peanuts. This meal would still be super divine.
I love long grain Basmati rice. I also love Mushroom, and Bell Pepper. So in this meal I combined all of my favourites together, and the result came out as a gorgeous looking platter of this delicious pilaf. I served this with honey mustard yogurt. Ummm!

The first time I made this pilaf was in last summer, in August, and fell in love with its flavors.

Here weather prediction says that it’s gonna be rainy almost the whole week and temperatures would be around 14° to 16°. So according to that, this is still not the time to share this long awaited recipe.
However regardless of the weather here, now I think this is perfect time to share this — summer or no summer. Excluding some of us, most of you will be having warm days anyways. Right?
And I also needed some vibrant meal to cheer up our dull days here! So here we go with the summer meal! 🙂

Therefore I made this really easy rice pilaf made with long grain basmati rice. It’s super simple and perfect for eating with veggies. Ohhhh, the delish grilled summer veggies. They are just so divine.
Pilaf is traditionally not paired with honey mustard yogurt but when I tried this combination first I told to myself, “Why in this world I did not try this before?”
And I just want to tell you that this combinations works just AWESOME! This fusion of honey mustard yogurt does really work like fairy dust — totally magical! Like really well, you just need to give it a try.
Okay, okay no more talking! Enough talk about the yumminess of this wholesome meal. Let’s get to action and start learning about this ‘Mushroom Pepper Pilaf With Grilled Veggies and Honey Mustard Yogurt And Chili Peanuts’.
This wholemeal plate has a little bit of everything. And when I say everything, I mean everything good. We are talking pilaf, grilled veggies, honey mustard yogurt, and chili peanuts.
Let’s learn to make this hearty meal.
Heat 4 tablespoons oil in a non-stick pan. Add cloves, cinnamon stick, dried red chili, black cardamom, green cardamom, and saute for few seconds.
Now add cumin seeds, coriander seeds and saute till they start to crackle. Add chopped garlic and saute for a minute.
Add mushroom, onion, bell pepper, salt, turmeric powder, and kasuri methi. Saute for 5 minutes. Add curry powder and saute for 2-3 minutes.
Add 4 cups of water rice, juice, and mix well.
Bring it to the boil, and turn down the heat on medium-low. Cook covered for 25-30 mins or until rice is tender. Remove from heat.
Preheat grill to high heat. Brush all the veggies with olive oil. Place vegetables on a grill rack coated with cooking spray. Grill all the veggies. Sprinkle with pepper powder and salt.
Whisk ingredients of honey mustard yogurt together in a bowl until thoroughly mixed.

INGREDIENTS
For Pilaf //
- 1 onion, sliced lengthwise - 1
- button mushrooms, sliced - 1 cup
- red bell pepper, julienned - 1
- oil/ butter - 4 tablespoons
- dried red chili - 1
- cloves - 2
- green cardamom pods - 2
- black cardamom - 1
- cinnamon stick - 1
- cloves - 2
- cumin seeds - 1 teaspoon
- coriander seeds - 1 teaspoon
- garlic chopped - 2 tablespoons
- long grain basmati rice, washed and soaked in water for 15 minutes - 2 cups
- salt, as per taste
- kasuri methi - 1 tablespoon
- turmeric powder - ½ teaspoon
- curry powder - 1 ½ tablespoons
- fresh lemon juice - 1 tablespoon
For Honey Mustard Yogurt //
- fat free plain greek yogurt - ½ cup
- garlic powder - ¼ teaspoon
- salt - ¼ teaspoon
- lemon juice - 1 tablespoon
- yellow mustard - 2 tablespoons
- honey - 3 tablespoons
- ground pepper - ¼ teaspoon
For Grilled Veggies //
- cooking spray
- oil for brushing
- lemon, cut into wedges - 1
- onion, sliced - 1
- cucumber sliced - ½
- carrot julienned - 1
For Serving //
- peanut chili peanut
- mushroom pepper pilaf
- grilled veggie
- honey mustard yogurt
INSTRUCTIONS:
Making Mushroom Pepper Pilaf //
- Heat 4 tablespoons oil in a non-stick pan. Add cloves, cinnamon stick, dried red chili, black cardamom, green cardamom, and saute for few seconds.
- Now add cumin seeds, coriander seeds and saute till they start to crackle.

Making Honey Mustard Yogurt //
- Whisk ingredients together in a bowl until thoroughly mixed.
Making Grilled Veggies //
- Preheat grill to high heat.
- Brush all the veggies with olive oil.
- Place vegetables on a grill rack coated with cooking spray. Grill cucumber and carrot 4 minutes on each side or until tender.
- Grill onion 6 minutes on each side or until tender.
- Grilled lemon wedges for 4 minutes or until tender.
- Sprinkle with pepper powder and salt.
Serving //
- Transfer pilaf in a serving plate. Drizzle over some honey mustard yogurt. Top with chili peanuts and serve along with grilled veggies. Enjoy!
